Hilary's Eat Well






There are days when I just don't have time to cook. I know I'm not alone in this. When you have special dietary restrictions, or prefer to eat healthily, making a quick and easy meal can be a hard task. I am always on the lookout for new foods that I can keep on hand and make when in a bind, but that do not lack in taste. Recently, I was introduced to Hilary's Eat Well - a line of products sold at Whole Foods and other markets around the country. They have four DELICIOUS items to choose from:

All of her products are free of gluten, soy, nut, egg, corn, GMO, yeast, and dairy. They are calorically friendly, filled with protein and fiber, and they do not contain a ton of sodium like a lot of prepared frozen products. 

When you need something quick, tasty, and healthy, trust me when I say you won't regret having one (or all) of these products on hand. They are the best veggie burgers I have ever purchased. 

She also offers recipes on her website, which give great ideas for how to prepare your burgers and spice them up! I'm sharing one of my personal favorite's from her website - The Adzuki Bean Burger with Southwestern Grilled Veggies. 




 

Adzuki Bean Burgers
 

green pepper (quartered)
 

anaheim chili pepper (halved)
 

Onion (quartered)
T

lime juice
t

ume plum vinegar
1⁄2 t

chili powder
t

ground cumin
T

virgin coconut oil
1⁄2 t

garlic powder
 

avocado (sliced)

In a small bowl, mix together lime juice, ume plum vinegar, chili powder, cumin, garlic powder and coconut oil. Cut peppers and onions into halves or quarters, and coat them with the mixture.  Place veggie pieces directly on the grill and cook until soft, flipping once.  Remove from the grill and allow them to cool slightly before chopping into smaller pieces. Let sit for 10 minutes to allow flavors to mingle.  Grill frozen Adzuki Bean Burgers for 5 minutes on each side, until crispy outside and hot in the center.  Top the burgers with the southwest grilled veggies and avocado slices and enjoy!   Can be eaten on a bun, on top of greens or with additional grilled vegetables.
