Of all of the recipes I have ever made, this is definitely in my top five. This raw avocado-infused vanilla pudding is absolutely divine, and perfect for breakfast or a delicious dessert. It's incredibly healthy, and just perfect in every way.
This recipe is modified from Choosing Raw, which is an awesome site.
(Serves 4)
Ingredients:
1 large Haas avocado
2 pitted dates
1 vanilla bean, seeds scooped out (tutorial here)
1/2 to 3/4 cup almond milk
pinch of salt
berries
Directions:
1. Pit and scoop out flesh of avocado
2. Combine all ingredients with 1/2 cup of almond water in a high speed blender until it is smooth. Slowly add rest of almond milk (or as much as needed) to get desired smooth, pudding-like consistency
3. Pour into small bowls or mugs, top with berries
4. Devour
5. Repeat #4 (because you will want more)
I highly recommend using the fresh vanilla bean instead of extract, if possible. It truly makes a difference.
Each serving is about 130 calories (without berries) and is truly my favorite new breakfast/snack/dessert/everything.
