Homemade Veggie Burgers

Veggie Burgers (V/GF)

Makes 4 Burger Patties
One can of kidney beans, mashed up 
**(note: I tripled this recipe, so make a lot and freeze it, so I used one can kidney beans, one can black beans, one can garbanzo beans, and tripled the rest of the recipe)
One third cup of baked sweet potato (you can use canned)
One third cup cooked quinoa
One third cup oats (not cooked, and if you are GF, use GF oats!) 
2 tablespoons mashed up and drained tomatoes
Diced onions and mushrooms optional.
Season to taste with salt, pepper etc

Combine the rest of the ingredients with the mashed beans, and make 4 patties

Grill about 5-6 minutes on each side, or until crisp

Serve with a bun, or over a bed of lettuce. Either way, you are in for a delicious treat!
