I was over at a friend's house for some drinks and darts when she insisted I take home a bag full of passion fruit. Her tree had been dropping so many she didn't know what to do with them. My book club was right around the corner, so I decided to make something sweet!
I made passionfruit bars, kinda like lemon squares, only better, because its made out of passion fruit!
Bottom Layer:
1 cup butter
1 cup white rice flourr
1 cup brown rice flour
1 tsp Xanthan Gum
2 cups sugar
Before you get started preheat to your oven to 350 degrees. In a mixing bowl, mix up your butter and sugar until is is nice and smooth.
Next add in your brown rice and white rice flour and xanthan gum.
Next add in your brown rice and white rice flour and xanthan gum.
After it is all mixed together pour it into a cake pan and spread it out evenly. Bake for about 20 minutes or until it starts to brown. Then take it out of the oven and let it cool to room temperature.
Fruit Layer:
6-8 fresh passion fruits (or 1 cup of concentrate/puree)
6 eggs
21/2 cups sugar
1 cup white rice flour
1/2 tsp xanthan gum
I first whisked the passionfruit and seeds to break it up a bit, then poured the mixture into a strainer.
Use a fork or spoon to squish as much juice and pulp out of the passion fruit as possible.
You want to get about a cup of the liquid. (Right about now your whole house will smell pretty amazing! Enjoy!)
Next add in the eggs and whisk till it is smooth. Add in the sugar, white rice flour and xanthan gum and continue to whisk together.
When it is ready it should look a little bit like this.
Pour the passion fruit mixture on top of your cooled cookie layer.
You will then put it back in the oven and bake for about 30 minutes.
While it is baking go ahead and and get your jam ready. This will be your topping.
Topping:
3/4-1 cup passion fruit
1/3 cup sugar
Add the passionfruit, seeds included into a pot and stir in 1/3 cup of sugar. Let the mixture come to a boil for a few minutes then turn down the heat and let it simmer.
It will naturally turn into a jelly. Wait for it to cool a little bit then pour it into a container to later put on top of the bars (or use as a jam on ice cream, toast or eat it with a spoon!)
There ya have it! Super delicious passion fruit bars!
These are not a healthy dessert, but they are gluten free! Just because you are on a gluten free diet, doesn't mean you can enjoy some legit desserts!

When your pan has completely cooled you are ready to put on the jam and then cut it into squares.

These pieces I cup are actually way big! This is really sweet and rich so you do not need much to be satisfied! I recommend taking into work and sharing it with everyone you know, they will think you are a rock start for making them!
