Gluten Free Halloween Cookies

Mahaley is still out of town, so today on Gluten Free Best Friend we have a special guest!


Becky Jensen joined Bailey to make Witch Fingers to celebrate their favorite holiday!
These cookies are quick and easy to make and taste amazing. They look like they take much more work than they actually do, so you can be a hit at the halloween parties you go to!

Ingredients:
1/2 cup almond meal
11/3 cup white rice flour
1/2 cup brown rice flour
1 tsp salt
1/4 tsp baking powder
1 cup sugar
1tsp vanilla
1/2 tsp xanthan gum
1 cup butter
sliced almonds



Instructions:
1. Mix the butter and sugar until smooth.
2. Add the vanilla, baking powder and salt.
3. Mix in the brown rice flour, white rice flour and almond meal.
4. Mix all together then grab a handful to roll into the size of your index finger.
5. Place the 'finger' on parchment paper and use a fork to create 'knuckles' by pressing down lightly in the middle.
6. Add a sliced almond to the top of the finger to resemble a gross witchy fingernail.
7. Bake at 300 for 20-30 minutes or until they begin to turn brown.
8. Enjoy!




Now that you have this recipe a few weeks before Halloween, you have no excuse not to bring something fun to your costume parties!



Our question of the day is... What is your favorite halloween treat? When you go out to trick-or-treat, steal from your kids or siblings bag of treats what do you go for? We snag up as many Reese's peanut butter cups as possible! What do you try to avoid, or what stays in your bag of treats until you decide to toss them out?


Also, since it is Halloween, we would love to know what you are going to be dressing up as. We have a few ideas for ourselves, but they will have to be a surprise!
