Simply Healthy Sweet Potato Burgers

Bailey is giving the Delgado Diet a try and making lots of goodies from the Simply Healthy Cookbook.

Today she is making some Gluten Free, Dairy Free, Oil Free and Vegan Sweet Potato Burgers. Boy is that a mouthful!

This recipe was really easy and really tasty!


Ingredients:
2 cans white beans, drained
1 large sweet potato
2 tbs tahini
1 tsp cajun seasoning
1/4 cup GF flour
2 tsp coconut nectar
GF bread crumbs
1tbs vegetable broth
salt and pepper to taste


Directions:

1. Mix together the sweet potato and white beans with the seasoning and flour.


2. Roll together patties and coat in the breadcrumbs.


3. Add some vegetable broth to your pan and cook the patties until they are cooked throughout and brown on both sides.



4. Serve any way you like! I cooked up a few of these and ate them as burgers, tossed some on a salad and even cooked some up for breakfast and drizzled some agave on top like sweet potato pancakes!


All you have to do is freeze about 1/2 of it and you will have delicious sweet potato treats any time.
