Gluten Free Chili and Corn Bread

For today's episode Mahaley might look a little funny. Thats because she is out of town so Aaron stepped in to help Bailey make some Chili and Cornbread for a football themed episode!


This chili is gluten free and vegan, the corn bread is gluten free and dairy free! It is also so delicious!

Chili Ingredients:

2 cans of red kidney beans 
1 can of white kidney beans
1 can of black beans
2 cloves of garlic
1/2 a medium sized onion (chopped)
2 carrots (chopped)
2 celery stalks (chopped)
1 can diced tomatoes
1/2 cup tomato paste
4 cups veggie stock/broth
1 cup quinoa (pre-cooked)
2 tbs chili powder
1 tbs cumin
1 tsp salt
1/4 tsp pepper



1. Start by sautéing the garlic with some olive oil then add in your chopped veggies and let  them cook until they start to  get soft.
2. Next add in your 4 cups of  veggie stock and bring to a boil.
3. After the stock has started to boil add your beans. You can play around with this part depending on what type of beans you prefer. Just make sure you have 4 cans.
4. Let the beans cook for a bit then add in your diced tomatoes and tomato paste
5. Add the chili powder, cumin, salt and pepper
6. Add your already cooked quinoa.
7.  Reduce the heat and let it simmer for at least 20 minutes. 


This chili gets better and better the longer it gets to sit. It also makes a HUGE batch so  you will have plenty for left overs or enough to feed a big crowd of hungry football fans!


Cornbread Ingredients:

1 bag of Bob's Red Mill Corn Bread Mix
2 eggs
1/3 cup of vegetable oil
1 1/2 cups milk (we used almond milk)


This is super easy to make! Preheat your oven to 375, then just mix all the ingredients together. Pour into whatever pan you would like to cook it in. Bake for 20-30 minutes or until it starts to brown on the top.



This turned out great and even Aaron Mr. Meat Eater loved it!
